- 2 cups poha (flattened rice)
- 1/4 cup peanuts (roasted)
- 1 small onion (finely chopped)
- 1 green chili (slit lengthwise)
- 1/4 tsp mustard seeds
- 1/4 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 tsp ginger (grated)
- 1/2 tsp sugar
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves (for garnish)
- 1/2 lemon (juice)

- Step 1
- - Wash the poha thoroughly under running water. Let it soak for 2-3 minutes, then drain the water.
- - Keep it aside to rest for a few minutes.
- Step 2
- - Heat oil in a pan and add mustard seeds. Once they crackle, add cumin seeds, followed by chopped onions and slit green chili.
- - Saute until the onions turn translucent.
- Step 3
- - Add grated ginger and turmeric powder to the pan, and stir well. Cook for another minute.

- - Add the roasted peanuts and sugar to the pan, mixing them well with the other ingredients.
- -This adds a sweet crunch to the upma.

- - Now, add the soaked poha to the pan. Mix gently so that the poha absorbs the spices and becomes evenly coated.

- - Season with salt to taste and stir well. Cook the poha for 5 minutes on medium heat.

- - Turn off the heat and squeeze fresh lemon juice over the upma.
